Try to keep the ovens next to each other and close to the pantry. Place the freezer and fridge beside each other and on the other side of the room away from the ovens.
Everyone needs to have their own working space. You don’t want people running around grabbing items and prepping food when someone is at the stove trying to grill meat or cook pasta. For example, keep the dessert station away from the meat station.
Hygiene is something that you don’t want to have a problem with. Make sure that sinks and trash cans can be operated by a foot lever. This prevents people from having to touch it and spread germs to the food.
Without the right amount of lighting you are going to be lost and confused. Use recessed lights built into the ceiling. Track lighting is also effective – but they can be more expensive.
Stainless steel cabinets and appliances is the only way to go. This material is durable and easy to clean. Using this will help to reduce the spread of bacteria and to keep your catering kitchen looking great at all times.
